Chicken Curry

Ingredients (6 people):
- 200 g onion
- 2 garlic cloves
- 2 tbsp olive oil (± 30 ml)
- 800 g chicken breast
- 250 ml coconut milk
- 1 small tin peeled tomatoes (± 240 g)
- 1 tbsp curry powder (± 15 ml)
- Salt and pepper
- 10 dried apricots
Preparation:
Peel onion and garlic. Cut the garlic into 2 parts, remove the small green core. Chop them together in the Extra Chef. Place them in the MicroCook Round 2.25L with the olive oil, cover and microwave for 3 min. at 600 watts.
On the Domed Cutting Star, cut chicken into pieces using the Chef Knife. Slice apricots into halves.
Place chicken in the MicroCook, along with all ingredients.
Mix together using the KPT Silicone Spatula, cover and microwave for 15 min. at 600 watts, stirring halfway through. Allow to stand 5 min. before serving.
Additional Note:
Serve with rice cooked in the Microwave RiceMaker.
