Steamed Spicy Seafood (Otak-Otak)
Ingredients (4 people):
- 150 gm fish fillet cut into 12 thin slices
- 3 large eggs
- 100 ml thick coconut milk
- 4 kaffir lime leaves finely shredded
- 4 shallots
- 2 cloves garlic
- 2 thin slices galangal
- 1 stalk lemon grass
- 3 red chillies
- 5 dried chillies soaked
- 1/2 tsp turmeric powder
- 2 candlenuts
- 1/2 tsp salt
- 1/4 tsp sugar
- 1/2 tsp pepper
- 1/4 tsp belacan powder
- 1/2 tsp chicken stock granules
- 1 tsp rice flour
- 1 tsp cornflour
- 6 pieces banana leaves (15 x 13 cm) dipped into hot water to soften
- 6 kaduk leaves

Combine ingredients in Modular Bowl 3L

Fold soften banana leaf into a case. Secure with toothpicks. Line each case with a piece of kaduk leaf. Put portions from Modular Bowl 3L into the cases and arrange on Steam It.

Steam over medium heat for about 8 - 12 minutes or until cooked. Remove and serve with rice or bread.
